A few months back though, Chris made us all pancakes, which we discovered when we got home from work/school. I tried to sound grateful but I knew that the kids would be pretty tactless when they said they didn't like pancakes. However, I was surprised when both children sounded keen to try the pancakes and even more so that they both loved them. As such, we've had pancakes a couple of times since - something which was previously unheard of.
Today its Pancake Day and it just wouldn't be right if we didn't all enjoy pancakes for dinner. Chris was off today so he whipped us up a batch of pancakes and I set to work once the kids and I got home.
I wanted to keep it quick and simple, so I fried off some chicken, onions and mushrooms in one pan and made a cheese sauce in another pan. I then combined the two together, leaving some cheese sauce left over for the top. I then placed a bit of filling in the middle of each pancake, rolled it up and placed it in an oven dish. After lining up about six pancakes, I topped them with the rest of the cheese sauce, plus a little more grated cheese. I then shoved it all in the oven and gave it thirty minutes or so to warm through and for the cheese to melt.
It looks a little like lasagne when it comes out, but once you cut into it you can see the difference a bit more. The finished result was yummy and even the kids enjoyed it.
However no Pancake Day dinner would be complete, without the sweet pancakes afterwards. Chris and I were both full so we refrained, but the girls both had one each. Lily simply had Nutella in hers, while Megan had Nutella with Peanut Butter. Had I of had room, my topping of choice would be lemon juice and sugar!
